Kim and Tracy were both in the restaurant business for over 20 years before deciding to open a restaurant of their own.
Kim worked a full time career as a chemical dependency counselor and moonlit at night as a bartender at the former Steamboat Landing. Tracy worked full time in the real estate industry in the appraisal department and moonlit as a waitress at the Canandaigua McGregor’s.
When the steamboat landing was getting ready to close and torn down to build a future hotel, the pair were approached by then owner, Dave Genecco with an idea to open a restaurant in the building that is now Rio Tomatlan. Although that deal didn’t prove to be a good option, the idea had been born. Sometimes ideas take on a life of their own and it was fast taking shape as a reality. The pair continued on their search to find the perfect location for their business idea. They found it when they noticed that the former train station was for sale and approached the owner about leasing the first floor. The owner was receptive and thus a lease was formed!
Tracy spent time in Colorado and while there, worked for a brewery and restaurant called Tommy Knockers. The establishment had the brewing and the restaurant in an open air space so diners could watch the brewing process while enjoying a pint and a sandwich. This concept was something the pair hoped to bring to Canandaigua. Not wanting to attempt a brewery and a restaurant at the same time, they approached their good friends who were looking for the perfect location to open their Brewery. They decided to all go into the train depot together and form a brewery and restaurant in the same location.
It was here that the Twisted Rail Brewing Co and The Beehive Brew Pub we’re born.
The Pleasant Street location seems to be perfect breweries to get started in the industry. When Twisted Rail moved onward and upward to a larger location they were followed by Peacemaker Brewing Company who eventually followed in that same exciting path. Today we’re proud to say our neighbor is Square Knott Brewing Company, who recently opened at the pleasant street location and are already making some great beers!
